Tea has been enjoyed for over 5000 years although it was only introduced to the western world in the mid 16000's. Tea has come to be associated with friendship, calmness, good taste and health. 

The making of tea is a ceremony in the east and it's proper execution is the criterion by which a good host is judged.  In our busy, busy world, the making and enjoying of a pot of tea can be a pleasant peaceful and refreshing interlude.

The making of a good cup of tea can be assured by following these steps:

  1. Use purified or filtered water - water quality is important. Chlorine in most water supplies can affect the taste and aroma of the tea.
  2. Only use freshly boiled water.  Do not use reboiled water.
  3. Use a teapot not a coffee plunger.
  4. Warm the teapot before adding the tea.
  5. Pour the boiling water over the tea.
  6. Allow the tea to brew for 3 to 5 minutes before pouring.  If the tea stands for much longer than this time it will "stew" and release tannins thus destroying the flavour.
  7. Stirring the tea before pouring gives a stronger flavour and is optional.
